Jack's Comments: We have had numerous requests for the Taylors wines and once you have tasted them you will understand why. This cabernet is showing generous and flavoursome fruit and balance. It has all the hallmark cabernet charateristics showing great ripe fruit, cinnamon, spices and hints of tobacco.The tannins are smooth and leave you very satisfied from a wonderfully rich Cabernet.
Winemaker's Comments: Taylors Cabernet Sauvignon colour is a deep red with a vibrant purple hue.
The wine has an aroma of rich blackcurrant, subtle star anise spice and a touch of eucalypt. French oak maturation is also evident with subtle aromas of tobacco leaf, cedar and chocolate.

Taylors Cabernet Sauvignon on the palate is a wine of great intensity. It has distinctive blackcurrant and cassis fruit flavours. Subtle oak characters of cedar cigar box and spice are also evident. The tannins are fine and elegant – a hallmark of the varietal. The palate is well balanced, complex and fulfilling and lingers on the finish.

Cellaring Notes
This wine can be enjoyed upon release but will reward careful cellaring up to and possibly beyond 2020.

Fruit was harvested from the Taylor family estate when the berries reached optimum flavour and tannin ripeness. Fermentation was carried out in the winery’s original “Potter” fermenters, which allow for excellent control of skin maceration and extraction as the wine can be pumped over twice each day. Some parcels were left on skins for a further 2 weeks to increase tannin structure of the overall wine. The parcels of wine were then pressed to French oak barrels for completion of primary fermentation and then malolactic fermentation. Post MLF the wine was matured for at least 12 months in French oak barrels (5% new; 95% 1 to 4 year old) prior to final blending and then preparation for bottling.
